Hugh Roberts famous Bean Pot Recipe
The late Hugh Roberts was Holli's father-in-law. These instuctions are just as he typed them.

Recipe for one pot of beans.

Beans should cook at 300 degrees for 6 hours.

Soak 8 oz.of dry beans in 6 cups of water for 10 to 12 hours. Be sure to rinse beans to get the dry powder off before you soak overnight.

Next Morning: drain beans first and let them sit. In one cup of cool water, mix one teaspoon of salt (optional), two teaspoons. Dry mustard 6 tablespoons of dark bown sugar and 5 tablespoons molasses. Mix with 5 cups of cools water.

Dice one yellow onion about the size of a tennis ball. Split diced onions into 3 piles. one small pile and two larger piles of equal size. The diced onions should be small enough that nothing will remain after the baking of the beans.

Cut one slice of salt pork in half and place in bottom of pot.
Add one of the larger pile of onions, spread around on top of the salt pork evenly.

Fill pot half full with beans. Slice second slice of salt pork in half and lay on top of beans. Spread the last pile of onions in top of beans.

Pour about 3/4s of a cup of liquid, maybe a cup, or enough to cover beans.

Introduce the pot into the pre-heated oven. Check every hour and a half to 2 hours. Be sure beans are always covered with liquid.

Bake the final half hour without a top on the pot to allow the salt pork to crisp

Depending on the efficiency of the oven, you may have to cook the beans an extra 1/2 to 1 hour longer.

Gma Castles Meat Loaf
Grandmother Castles is Holli's late grandmother on her Mother's side. Elaine is her daughter-in-law. Gma was a fabulous cook.

1 1/2 lb ground beef       1 egg (well beaten)     1 cup fresh bread crumbs
1 med. size onion        1 1/2 tsp salt     1/4 tsp pepper
1/2 can Hunts tomato sauce
Mix all this together really well and make 2 loafs

Sauce: 1/2 tomato sauce    2 Tbls mustard   2 Tbls brown sugar    2 Tbls vinegar     1 cup of water
pour some sauce over the loafs and bake of 400 degrees for 1 1/2 hours

Baste occasionally withe sauce. heat remaining sauce and us for gravy over mash potatoes
